i currently work in the meat processing industry. it’s strange, i know.
today i had to call one of my clients that works for a pork processing company.
our conversation was normal enough - i asked if i had caught him at a good time and he replied with:
“well, i’m just about to wrap my lips around [i got REALLY nervous at this point] my second slice of bacon explosion. you don’t happen to have a stint, do you?”
so apparently their in-hosue chef had cooked up the wonderous delicacy, pictured above. woven bacon, wrapped around sausage with more bacon piled on top - doused in bbq suace and smoked.
i would like some. now.
photo via nytimes - and you can find the recipe in that link as well.
